Peanut Butter Banana Baked Oatmeal

Plain oatmeal is not my thing. But bake it in the oven with a little sugar, spice and everything nice and it's instantly transformed into something I actually want to eat in the mornings. 

Baked oatmeal is so versatile. I've done chocolate chip baked oatmeal, apples + cinnamon baked oatmeal and pear + cinnamon baked oatmeal, and coconut baked oatmeal - all delicious! Peanut butter and banana are the perfect breakfast combo. And I even add a little Nutella if my sweet tooth is bugging me. 

I'll usually make this recipe on a Sunday morning in order to prep for the rest of the week.  





Peanut Butter and Banana Baked Oatmeal

Prep time: 15 mins
Cook time: 25 mins 
Servings: 10-12 

Ingredients
  • 4 cups quick oats
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 cu. milk (cow, almond, coconut - whatever you prefer!) 
  • 1/2 cup brown sugar
  • 2 tsp. vanilla extract
  • 1 tsp. lemon juice
  • 3 mashed bananas
  • 1/2 cu peanut butter*
  • Toppings: yogurt, nutella, cottage cheese, sliced bananas, frozen berries, raisins, maple syrup, etc. 
Instructions
  1. Preheat oven to 375F. Grease a 9"x13" baking dish and set aside. 
  2. In a large bowl, combine quick oats, cinnamon, baking powder and salt. 
  3. In another large bowl, add milk, vanilla, sugar and lemon juice, mashed bananas and peanut butter and stir. 
  4. Add wet mixture to dry mixture until evenly combined. 
  5. Pour into greased baking dish and bake in the oven for 25 minutes or until set. 
  6. Remove from oven and serve with your toppings of choice! 
*Swap out the peanut butter for actual butter if you'd like a more decadent baked oatmeal
